What you need:
- 1 large eggplant
- 2-3 tbsp of olive oil
- 2-3 tsp 1001 Organic BBQ Rub
- Fresh herbs for garnish (optional)
Instructions:
Preheat the grill to medium heat. Mix the olive oil with the 1001 Organic BBQ RUB in a bowl.
Cut the eggplant lengthwise into 1.5 cm thick slices.
Place the eggplant slices in the BBQ rub mixture and ensure that they are evenly covered with the mixture. Let them marinate for at least 15-30 minutes.
Place the marinated eggplant slices on the grill and grill for about 4-5 minutes per side, or until soft and golden brown.
Garnish the grilled eggplant slices with fresh herbs and serve.
