As the days grow cooler and we crave comforting meals, this colourful vegetable bake brings warmth to your plate and a taste of the Mediterranean to your home. With our aromatic Herbes de Provence, it’s simple, wholesome, and full of flavour.
Ingredients:
- 2 courgettes
- 1 aubergine
- 3 tomatoes
- 1 red pepper
- 1 yellow pepper
- 2 onions
- 3 garlic cloves
- 3 tbsp olive oi
- 2 tsp Herbes de Provence
- Salt & pepper
- 100 g grated cheese (e.g. Gruyère or Comté)
Steps:
Wash and chop all vegetables into bite-sized pieces. Finely dice the onions and garlic.
Heat the olive oil in a large frying pan. Sauté the onions and garlic gently until translucent. Add the rest of the vegetables and cook for about 10 minutes over a medium heat.
Season with salt, pepper, and our Herbes de Provence – they add a wonderfully aromatic, Mediterranean touch.
Transfer everything to an ovenproof dish, sprinkle with grated cheese, and bake in a preheated oven at 180 °C (fan 160 °C / gas mark 4) for about 25 minutes, until golden and bubbling.
Serve hot – ideally with a slice of crusty baguette and a few fresh herbs on top.
Tipp:
This dish can easily be prepared ahead of time and tastes just as delicious the next day.
